While I made list after list of what I needed for my newborn, I find that I really haven't given much thought to what I needed as my son got older. We didn't buy everything at once because of a lack of storage space, so we're buying as we need. So far, we've upgraded to a convertible car seat, purchased a high chair and a potty.
What are some items that have been lifesavers?

Kidding. Sort of 
But seriously, baby gates for doorways, hallways and stairs. Other than that and the three you mentioned, I can't think of any must-haves right off the top of my head. Although I'm sure there are more, most others are more optional, than must-have lifesavers.

how old is he? Just buy as you need things... The market is always coming out with new products so fast anyway...
I guess some necessities would be toddler tableware... Plates, bowls, utensil sets, straw cups and tumblers. For potty training, you have a potty already... you may also want to consider pull-ups or toddler flushable wipes. for the winter, boogie wipes are great for runny noses. Some optional toddler toys: tricycles, scooters, balance bikes, etc...
Also, there was a time when my toddler hated her stroller and just loved to walk. We live in NYC where there are crowds and cars everywhere, so one lifesaver during this period was a backpack with a "leash" for mommy/daddy. I know some people have their opinions on them, but for us it was about safety while at the same time allowing her to explore.
At this stage, not sure there are too many must-haves... It really depends on your child and family's needs.

I don't have carpeted floors, once DD started crawling and falling and standing and all that fun stuff, we definitely needed to get those play mats for her. There was a period of time she would keep hitting her head no the floor and it broke my heart. Those foam play mats really helped. But seriously, gates and general baby proofing stuff is so critical. They disappear on you the second you turn around.
