DH and I are heading to Vegas for a few days.
The only time he's been, he went with a bunch of guys and barely left the casinos.
I've never been.
If you've been, what would you recommend we see and do?
Aside from casinos and shows (which I've looked up), what would you recommend we try/don't miss?

The restaurants are amazing, you really can't go wrong. I strongly encourage making very advance reservations. Also, one of the big buffets (they all have one) is great.
I personally love staying at the Wynn. We love Vegas and it's really beautiful and elegant.
Also, I find that I really like to just relax by the pool.

Grub at the buffets like at Bellagio or Caesar's. They're a bit $$ but oh man. So good!!

I'm not a huge fan of buffets either. We didn't go to any while in Vegas. Bouchon in the Venetian is so good! So touristy but I loved doing a gondola ride in the Venetian as well

Check out the Fremont street experience. Vic & Anthony's is my favorite steakhouse ever. Take the Duce for cheap transit. Unless you are a huge MJ fan check out another Circ show. We go in March with the babe, I'm so excited.

Oh man, I love Vegas so much. I assume you're going without kids? Brunch at Bouchon is something we do every time. The buffet at the Cosmopolitan is amazing. Mon Amie Gabi in the Paris also does a great breakfast, and you can eat outside overlooking the strip. The Aria has a nice spa and for something like $30 you can use all the amenities (hot and cold plunge pools, an outdoor pool overlooking the strip, salt room, heated rock beds, etc) for a full day - I used to go there while my husband would play some poker. You can spend a whole day walking the strip and going into all the hotels, make sure you see the garden in the Bellagio.
I know you said you looked up shows but I just wanted to say that Ka is the best of the Cirque shows that I've seen.
Oh, and Yardbird is amazing.

@MaryM: it's super nice! The Circ show we went to there was outstanding. You are close to the Cosmo which is my favorite one to visit (we own a Hilton time share so I've never stayed there). Again, the Duce is really easy and cheap for transportation.

I love Fremont Street and Oscar's Steakhouse at the Plaza. Also the Absinthe show at Ceasar's is SO GOOD.

@MaryM: Oooh, the Aria is really nice. We stayed there 3 years in a row and only switched because the Cosmo has one bedrooms and it was easier once we started taking B.
If you need a quick, cheap, or late night meal the hidden pizza place at the Cosmopolitan is great. Third floor, go down the long hallway wallpapered with record covers.

Agree with @erinbaderin: definitely check out the garden in the Bellagio!
One of my favorite casinos to check out is New York, New York just because it's awesome inside! There's also a great Irish pub there. And it's generally more laid back. Also love Paris and The Venetian.
Bellagio has the greatest brunch buffet! Everything food related at Cosmo is great, too!
Touristy stuff to pay for... I love the views from the top of the Eiffel Tower. The aquarium at Mandalay Bay is pretty cool. If you're thrill seeker, the rides atop The Stratosphere are awesome! Also, try zip lining at the Fremont Street Experience.
From where you are, there is a tram/monorail you can take to Bellagio or the other direction to Monte Carlo or NYNY. There is also one from Excalibur to Luxor to Mandalay Bay. Personally, I wouldn't take the one that goes along the backside of the casinos (MGM Grande, Harrahs, etc.) on the other side of the street... A little sketchier for some reason.
When we go this summer, my to-do list includes going up in the new ferris wheel and eating at Bouchon.

I'd told DH I'd like to walk around and see the different hotels, but I like having a more concrete list of things to head for instead of wandering aimlessly.

@MaryM: Wandering aimlessly worked for us our first time out there 9 years ago (we've gone several times since). You will always find something interesting to see, a cool place to grab a drink, or a nice place to eat. There is no shortage of entertainment... So have fun!

DH is pretty much a pro at wandering aimlessly and finding the most random places to go. We've yet to go anywhere in the U.S. and not run into someone he knows (or the parents of someone he knows or something like that).

I wanted to update.
We did have a dinner at Bouchon which was really nice (and not nearly pricey as we expected!) and that evening stopped at Paris on the way back to our hotel and went up in the Eiffel tower in time to see the fountain show at the Bellagio. It was a really nice perspective of it, and we could even still hear the music.
We weren't particularly wowed by the buffet at the Bellagio. There wasn't anything about it that really wowed us. But we went for lunch so maybe that was the problem? Maybe it's better for dinner?
We ended up going to freemont street our last night and didn't make it very far down before we were done and ready to go home. The time change sort of killed our nights. I think seeing more of that is probably my only regret.
