this week we have grilled chicken and sides, tacos, pizza, spinach & cheese lasagna roll-ups, and spaghetti and meatballs!

I'm just working on mine, I need inspiration as well. I'm thinking an easy week as it's going to be busy with Easter next weekend.
So far I got

Just finished mine. Low key this week because we're both tired and we're leaving to visit family for easter on friday.
I'm basically taking chicken + veggies + half sweet potato for lunch everyday. Dinners are:
Sunday - shrimp/kale salad with avocado, brussel sprouts, onions mushrooms tomatoes
Monday - chicken "pizzas" (chicken breast pounded out and treated like pizza dough + salad)
Tuesday - mexican pizzas (low carb wrap spread with refried beans and topped with chicken/pepper/onions/cheese +salsa and guac
Wednesday - pork chops + asparagus + portobello mushrooms
Thursday - takeout

monday- ham, beans, rice
tuesday- roast chicken or steaks depending on mr. bird's request (have both in the freezer)
wednesday- birthday dinner with my parents for me/quiche for mr. bird
thursday- birthday dinner with my littles
friday- pasta & turkey meatballs

When I meal plan I usually pick a different protein for each day because we don't like having similar things two days in a row. That really helps give me some direction. We rarely have meat-free meals in our house.
Some of our favourite dishes are:
Parmesan baked fish with tomato and avocado salad
Homemade hamburgers (we do bunless and top with bacon, avocado, greens and condiments)
Ribs and roasted sweet potatoes
Sausage (bison) and grilled veggies

Monday - grilled steak tips with potatoes and roasted zucchini
Tuesday - Pecan chicken with rice and green beans
Wednesday - I'm out with a friend and hubs is having pizza
Thursday - Home made meatball subs

@Mrs. Sunshine: i pound the chicken breasts out and cook them for like 10 mins maybe at 350. And while they're going, i make the toppings real quick. Then pull 'em out, pop some pesto or tomato sauce on them, toppings and cheese, and put them in for like 10 minutes until the cheese melts. I guess they're essentially like easier stuffed chicken breasts but i got the recipe from a paleo site that called them pizzas.

Today: Melty cheddar apple turkey sandwiches with salad & orange slices
Monday: Pan seared turkey sausage & broccoli, mozzarella, black bean pasta salad
Tuesday: 1 pan chicken dinner (just potatoes, a veggie & chicken all baked together in one pan.)
Wednesday: Leftover turkey sausage & spinach artichokes quesadillas
Thursday: grilled chicken & berry salad

Tonight I made Vietnamese crockpot chicken with basmati rice. I strain/reduce the sauce in the crockpot on the stovetop and throw some frozen green beans into the sauce to cook/heat.

I also grilled Korean boneless short ribs, bratwurst, and herb/peppercorn pork tenderloin on the grill and baked 6 sweet potatoes over the remaining embers. I portioned everything into individual tupperwares with frozen green beans and frozen corn for sides.
We'll host a Easter potluck on Friday night. I will make a crockpot ham using the recipe below, a corn casserole, and some green beans. I'll also buy some butterflake rolls. Others will bring salad and dessert.
