This week we have:

S: Grilled steak and roasted asparagus
M: Spicy sausage, white bean and spinach bake
Tu: Israeli couscous salad with butternut squash, spinach, feta and walnuts
W: Chicken salad over spinach and/or salad greens
Th: Slow cooker spiced beef with sweet potatoes over couscous
F: TBD. D really likes ending the week with takeout of some sort, so maybe pizza?

D's not home for dinner/bedtime, and with my commute I don't have much time to cook a fresh meal, so I've found it much less stressful to plan meals that I can make the night before that I can easily reheat (preferably things that benefit from some flavor-mingling--so last night I made the white bean bake, and tonight I made the couscous salad) or slow cooker meals. Not quite as good as freshly made meals, but it's working out pretty well so far!
