I'm having leftover slow cooker chicken and biscuits with carrots. The best part? We had this for dinner last night and Wagon Jr. ATE THE CARROTS!! First real veggies in MONTHS. Joy.

yum! I just ate a falafel wrap and a cup of tomato basil soup. Even though Ive lived in NYC for 4 years, I JUST tried falafel (sweet sweet yummy food of the GODS) for the first time like a month ago and now I cant get enough. And Liv freaking lvoes it too. Win win!

Leftovers!
Grilled pork loin (marinated w/honey mustard, maple syrup, s&P & garlic salt), roasted sweet potatoes with fresh herbs & a hint of lime, savory stir fry arugula.

I'm still debating if I want to re-heat my leftovers (rice and pork chops) or get something else.
Edit: I ended up going down to the food court to get some egg drop soup.

@Andrea: It's a super easy recipe I found on allrecipes.com. Basically I put chicken breasts (still frozen), fat free cream of chicken soup, low sodium chicken broth, butter, and garlic and onion powder in and cooked on high for about 5 hours. (Usually I use a diced onion but didn't have any.) Then I put in sliced up pillsbury biscuits (the kind that comes in a metal roll). I cooked the (frozen) carrots separately and threw them in at the very end (I didn't want the biscuits to soak up the flavor of the carrots). SO DELICIOUS and pretty healthy too.

And there's nothing healthy about those biscuit rolls! Just like my beloved crescent rolls. I love those dang things.

@regberadaisy: yes!! I read it actually keeps the chicken more moist. Definitely worked in this case.
And yes, those biscuit rolls are the one thing I feel guilty about putting in But I used all white meat chicken breast and low fat / sodium everything else. And I only used one roll of biscuits vs. two. I think they actually have reduced fat rolls of biscuits but I just bought the one on sale!

@Andrea: no prob! It's a crowd pleaser... such a comfort food. Wagon Sr. was drinking the sauce yesterday. Haha. It actually comes out more of a chicken stew.

I did 6 chicken breasts, 2 cans of ff cream of chicken, 2 cans of low sodium chicken broth (instead of water), garlic powder, onion powder, omitted the onion cuz I didn't have one... 1 can of biscuit dough, and a package of frozen baby carrots.

I brought a lean cuisine for lunch. Then promptly went to the on-site cafeteria and bought a grilled chicken sandwich with lettuce, pickles and honey mustard, made a small salad and grabbed a brownie. Best decision ever!

I've been avoiding the Easter candy in my house, so I needed something good for lunch. Made a huge bowl of German potato salad, snacked on that and the leftover bacon.
