DS eats a lot of things cold-veggies/hummus, beans, fruit, yogurt, cheese, roasted chicken/turkey. I tend to give him a variety of options and sometimes heat things up in the microwave if he doesn't want it cold (steam veggies, etc).

sandwiches, frozen foods that you can defrost in the microwave (frozen meatballs, frozen chicken hot dogs), pasta with pesto, eggs.

Crockpot: taco meat, BBQ chicken/pork/beef, orange chicken
Salads (although this never flies with my must eat meat husband) so we do cold pasta with grilled chicken a lot. I will grill up a bunch of breasts for the week to toss in.
Tuna/Egg/Chicken salad sandwiches, chicken nachos in microwave, grill hamburgers/brats/hot dogs/pork chops/veggies.

DS is loving corn on the cob - I microwave the whole ear (husk and all) for 3.5-4 minutes, let cool for a couple minute, husk - voila, perfect corn! Bonus, it keeps him occupied for a long time!
Other than that - I have been taking advantage of frozen veggies and steaming them in the microwave, canned beans, bagels (his current favorite I do in the toaster - bagel pizzas), Greek yogurt, plus whatever leftovers we may have in the fridge.

:: my girls love mini pitas w/ cream cheese in them and sometimes i put fresh sliced deli turkey / chicken inside. they also like the pita w/ hummus!
:: a cold pasta/orzo salad w/ olives and cucumbers and mini tomatoes and corn?

:: do you have a toaster oven? i use ours for sausages, sweet potato fries, hot dogs, chicken nuggets.

From my nannying days, "picnic" meals went over really well.
- PBJ "quesadillas" (i.e. on a tortilla) cut into wedges
- "Sushi" sandwiches (i.e. spread hummus or cream cheese on a tortilla, add shredded veg, cheese, or meat and roll up and slice).
- Cut fruit and veggies
- Cheese slices or string cheese
- Cold shredded rotisserie chicken meat
- Thaw frozen mixed veggies (carrots, peas, corn, edamame, green beans, etc) and toss with beans, olive slices, and cheese chunks and your favorite dressing - like a pasta salad without pasta.
- Frozen corn and peas are actually quite good to eat and kids like them that way!
- Frozen grape or banana pieces to gnaw on
- Crackers

Last night J just had rolled up salami, cold peas, grapes and crackers! Lame. I just had crackers and hummus.

@filly: @hellobeeboston: Aw, thanks! Obviously you can also make sweet versions with PB, honey, jam, bananas (cut the long way), raisins, etc.
UM also banana, Nutella, and strawberries for mommy...

I'm saving this list!
Our new thing is grilled sweet potatoes. Cut into thick wedges, Par boil, season with evoo, garlic salt and lemon or lime juice. Grill both sides.

@NovBaby1112:Black bean bowls! I microwave black beans with some cumin, slice up half an avocado on top, shred some cheddar cheese over it and add from there - sometimes sour cream, or jalapenos and salsa.

I do a variation of this with orzo instead of rice and greek yogurt. It's delicious and just FEELS so summery:

We aren't supposed to cook meat while showing te house so I gf a rotisserie chicken and made this, it's one of my favs
