Hmmm. Tacos is the only really "fun" thing i can think of. Though, I can't wait until P is a tiny bit older and we can do make your own pizza nights!

PIzza night so they can make your own (some of my favorite memories as a kid), build your own nachos/tacos, bake potato bar, anything that the kids can do themselves! My nieces love coming to my house because I always let them help make the food!
edit: also Brinner (aka breakfast for dinner) this was our favorite growing up!

We had something called "mexican pileup" for some reason. It's kind of like make-your-own nachos with but with Fritos as a base.
My mom would make some kind of ground meat (turkey or hamburger or sausage) with taco seasoning and put it out for people to serve themselves, along with bowls of cheese, sour cream, guac, diced tomatos, shredded lettuce, etc.

We make Pringles chicken & it's super yummy! Basically just baked chicken with Sour Cream and Onion Pringles instead of bread crumbs. M would have fun crunching up the chips! That's my favorite part. Just pour a whole can of the SC&O Pringles in a bowl and let her go to town. Dip the chicken in egg, dip in the broken up Pringles, put on a baking sheet, and drizzle a little butter on top.

I agree "make your own pizza"! It was at my baby shower and it was a total hit!!
