rice and bean "burrito bowls" are pretty quick and easy. Or quesadillas.

My go-to meals are:
Steak, broiled w/ frozen fries
BBQ chicken wings, baked w/ baked sweet potatoes or egg noodles
Spaghetti & meat sauce
5 ingredient casserole (pasta, cream of mushroom soup, milk, butter, cheese)

Paninis with frozen sweet potato fries, stir fries and taco soup are some of my easy go-tos.

Chili, pasta, pita pizzas, broiled fish (especially tilapia parm), "taco rice" (basically taco filling on top of rice instead of in tacos), crockpot meals like ribs or pulled pork, etc.

Something on the side depending on what you have on hand - salad, fruit, tater tots!

Spanish-Lentil Rice casserole, Salsa Verde crockpot chicken, Dijon-Lime chicken breasts with potato wedges and a veggie, etc.

Naan bread pizzas! My husband looooves them. Garlic naan, pizza sauce, fresh mozzarella, and fresh basil. So easy and delicious.

Baked potatoes (in the microwave) with steamed broccoli and cheese on top.

Tuna casserole: rotini, can of tuna (or chicken if you prefer), cheddar cheese soup, splash of milk, pepper.
tator tot casserole: 1 cup minute rice, can oc cream of mushroom, pound of brown hamburger, 1/4 cup milk, handful of cheese. Top with tator tots and bake for 30 minutes.
AND when I'm feeling particularly lazy (and this is in no way healthy)
tortilla chips, topped with cheese, grilled chicken, and enchilada sauce.

Frozen chicken, black beans, frozen corn, tomatoes, taco seasoning. Dump it in the slow cooker, forget about it for the afternoon. Serve with tacos, tortillas, tostadas, or just corn chips, honestly. Plus cheese, sour cream, more salsa.
Another super easy go to for me is pasta - I grill up some frozen sausages, some onions and peppers, and toss that with spaghetti and feta cheese, and some spices. Sub the sausage for chicken easily, and sub the veggies for really anything. Just - grilled veggies and protein over pasta, with lots of good spice for flavor. Super easy.

Grilled chicken breasts and baked potatoes, breakfast for dinner, or grilled cheese sandwiches are all quick and easy options. I also love pasta for a quick meal but you said you aren't feeling that now.

We always fall back on soup & grilled cheese, tacos or pasta when we're feeling lazy. Or eat out/get take out.

Atlantic Pacific soup. Our pantry is always stocked with our favorites.
If I'm actually cooking spaghetti is my fall back easy enough dinner to make.

@Ra: We do this too, or sometimes tortilla pizza! We will add other veggies we have on hand, like we usually have mushrooms and spinach.
I usually keep a can or two of Amy's chili on hand and will microwave a sweet potato, slice it in half, and top with the chili, cheese, and plain Greek yogurt or sour cream. So easy and filling!
I sometimes use the rice cooker to cook rice, then stir a can of black beans and a can of seasoned diced tomatoes right in with it. We either eat that as is or put it on wraps.

Stir fry! A meat + whatever veg I have handy. Tonight Tonight it was chicken with celery, Broccoli and shitake mushrooms over sweet rice.
I also do noodle soup a lot with shrimp and veg. I've always got homemade stock in the freezer in quarts.

I like frying up taco meat and serving it over Tostitos with cheddar melted over top. Easy peasy
