In the cooler months we use thyme, bay leaves, basil, oregano and rosemary a lot! Whereas in the warmer months we use more cilantro, parsley and dill. Basil is kinda all year round!

I think i cook with fresh herbs all year around! Basil is a summer herb for me though, which is too bad since i love basil.

Definitely sage - it pairs perfectly with the 'orange' veggies like sweet potato and butternut squash.

I hadrly cook with herbs and spices. A lot of it is laziness, the rest of it is that I don't care for a lot of them...I won't allow garlic in my house and my husband isn't big on a lot of the dried spices.
If I had space in the kitchen, I'd do an indoor herb planter, but even then, most of the stuff goes to seed before I can be counted on to use it!

In the winter we grow herbs on our aerogarden. We use herbs a lot but what we don't we dehydrate.

Fresh herbs: Sage and rosemary
Dried: We use whatever is in our cabinet -- doesn't really matter if it's seasonal when they're dried.

@skibobrown: oh no, I just meant that there are certain herbs that are more geared for cool weather foods. Ie I use dill mainly on fish which I tend to cook more in summer. Where as rosemary is for roasts which I don't do as much of it in hot weather. Bay leaves in stews, thymes, oregano in pasta sauces, etc.

@locavore_mama: Yeah, that's true. I rarely use sage or rosemary in the summer. Although I use basil, oregano, and many others year round.

Basil, oregano, and thyme are pretty much year round for me.
For spices, I use a lot of cinnamon in the cooler months because I bake more apple crisps and pies, coffee cakes, etc. I also add it to squash.

We use a lot of sage, rosemary and thyme during the fall/winter (and now I'm singing the song...) and dill, parsley and oregano during the spring/summer. I can't stand cilantro, and everything else is just whenever I happen to grab it.

I don't want to thread jack, but has anyone tried freezing their herbs? I've seen this but didn't know it if worked. I feel like I waste a lot and would love to try and perserve them.

@LuLu Mom: I haven't! But one of the bloggers just posted about it. It was a money saving post. The best way I've seen is blending with evoo and freezing in ice cube trays. I also hang them by the stem to dry then put them into those IKEA spice glass jars?
