Egg casserole muffins or monkey bread muffins (I prefer things that are easy to pick up and smaller portions at brunches so I can try a bunch of items! Fruit is also a great go too.
I threw a brunch baby shower and here was our menu:
egg/veggie muffins
monkey bread muffins
fruit cups w/ dip
mini quiche
mini bagels & bagel dip
mini cinnamon rolls & donut holes
1/2 savory and 1/2 sweet!

Eggs benedict is my absolute favorite at brunch, but that's not especially simple to prepare.
We had a homemade, brunch engagement party, with lots of mini, finger food. We kinda went all out, so you could down scale the whole thing for your LO's bday party. Our menu included french toast shooters (in those tiny shot glasses from IKEA), bacon skewers, mini bagels with smoked salmon and cream cheese, deviled egg halves, cardboard cones filled with cut up fruit (with the option to drizzle with honey, or powdered sugar), and mini breakfast frittatas.
We had a kids table with an easy, fun cereal bar and donut holes. We also had a mimosa bar for the adults, but you could totally do a milk bar with plain, chocolate, strawberry and soy/almond options.

@deerylou: I've been debating on doing deviled eggs. For some reason they don't seem breakfast to me.... I don't know why. Last year I did a quiche and everybody loved it, but I want this years to be different.

@artbee: what about a make your own waffle station? If you can borrow any waffle irons from other people as well? You can provide fun toppings and premake the batter the night before!
Mimosas for the adults? Or is that inappropriate?

@artbee: You could do some sort of breakfast bake or casserole, instead. I know there are a ton of recipes online.
How about homemade cinnamon rolls? We almost made little ones, to put on a stick, but we had more than enough goodies.
Breakfast burrito bar? Get a panini press, or two, and have people grill their own burritos. They're great with diced sweet potatoes and mango jalapeno sausage.

@regberadaisy: I thought about this too, I suggested chicken and waffles for another bee's mother's day brunch so I thought it could be fun to have a waffle station and have chicken as one of the options. But we will probably have about 30 people.... I worry that making their own would take up too much time.

I did a brunch for J's first bday this year with quiche and suasage as the main hot food and everyone loved them. Next year I'm thinking of doing a waffle station with an assortment of toppings

@artbee: if you had a couple irons I don't think it would be too bad bc not everyone will do waffles. So long as you had other food while people are waiting for a available iron I think it will be OK!

@regberadaisy: yup, there was granola in one of the bowls. They were a hit.
@artbee: I was thinking of cooking the waffle in the kitchen with multiple irons and then moving the 4 or 5 cooked ones to the buffet table. I figure while those people are working on toppings and the rest of their plate the next set will be cooking. Fingers crossed though!

@artbee: you could do a waffle station, make the waffles either the night before or morning of and keep them in the oven to stay warm!

What about doing the waffles but breaking them into the 4 sections and having each section be a serving? That way people can have a little of everything. Make them ahead of time to keep warm in the oven!

Here's what I would make:
Mushroom quiche
Baked french toast with maple syrup
Smoked salmon with pumpernickle and bagel thins plus accouterments
Berry salad with mint or berry skewers
Tea breads: carrot, zucchini, lemon poppyseed
Green salad- Cosi's Signature or Fuji Apple
Shellfish Pasta salad
Veggie crudite with green goddess hummus
Sliced ham, salami, prosciutto with brie, sundried tomato, asparagus spears, chutney, mustard

@artbee: like pp posters said BAKED FRENCH TOAST CASSEROLE...google pioneer woman's recipe. I make it for our monthly mom brunch and everyone goes crazy for it. It is sooo easy and sooo tasty!
