We made these avocado cream enchiladas from PaleOMG tonight - I don't try to "recreate" non-Paleo foods very often because they are never as good as the original, but these were pretty darn good!

Pretty much anything from Jamie Oliver's 15 minute meals! We had the sticky kicking chicken last night and the beef chimichurri two nights before that - both we're amazing, so light and fresh tasting whilst being packed with flavor! We also add his jiggy greens to a lot of our meals, which is just broccolini, asparagus, and bok choi put through the food processor to be finely diced and tossed through a super hot wok briefly with olive oil and a splash of teriyaki. Love them! Sometimes we skip the teriyaki and just use olive oil and a splash of lemon juice instead and that's equally outstanding.
I don't have links for you but the cookbook is amazing (and pretty cheap now too, I think i've seen it listed for $10 or $20 recently).

@Mrs. Pen: i love quinoa! yum. i made a quinoa casserole a while ago and don't know why i'd never tried that before.
@tlcbaby: YUM! i'm excited to try these!! did you make the tortillas too the way the recipe says? i'm not paleo, are they tasty enough to be worth buying coconut flour??
@Ree723: i don't think i've made anything of his, but that sounds awesome as a side i've been trying to diversify veggies. i'm going to see if our library has it, thanks!

@scg00387: We did make the tortillas - they didn't have too much flavor, but the avocado cream sauce gave the whole dish its flavor so it didn't matter much. It was kinda fun to make the tortillas, though

I made some changes to the recipe, based on the other people's reviews (I dipped the bread pieces rather than pouring the cream mixture on top for crispier toast pieces, and I halved the butter and sugar for the praline topping). But it was AMAZING. Like...christmas morning brunch good.

@Anagram: That has become my family's Christmas morning brunch recipe! We all joke that you can only easy it once a year anyway but it is sooo good!
I have been making the BBQ shrimp flatbread from How Sweet Eats over and over. It is an easy dinner staple for us now.

@scg00387: Mine usually isn't a huge fan, but he loved it in this!! (I did cut down the amount I used, but it was amazingly delicicous and easy!) We stuck some veggies and pineapple on kabobs too and dinner was done in 20 minutes!
