I have a bunch of eggs that are about to go bad, and a lot of time on my hands while I wait for this baby. I'm thinking a batch of chocolate chip cookies and.... what else should I bake? Recipes welcome!

Pound cake uses a lot of eggs!! I just linked to a plain one but you could add in lemon or orange zest, blueberries, chocolate chips.... basically anything else you have and need to use up.

I actually want to make one of these now since I also have a lot of eggs and we don't seem to be eating them fast enough.

I made a lot of banana pecan muffins for the freezer - so convenient to be able to pop one in the microwave for 30 seconds and have a snack. You could make some mini egg/cheese muffins and freeze them as well for a protein snack or quick breakfast? It's not really baking though.

Cookie dough for the freezer. Freeze the little balls of dough and pull a few out at a time for fresh cookies on demand.

Baked oatmeal! My recipe uses 4 eggs. It's really good for a fast breakfast.
(I can give you a recipe if you want... it is more cakey then oatmeal-ish).
