Tonight I made falafel and made cucumbers with a dressing that is put on seaweed salad. OH loves my psuedo-seaweed salad and requested that I make it more often. What else can I make to go with it?

We eat salmon with seaweed and cucumber like salads a bunch.

I don't know exactly how your seaweed salad is being dressed, but seaweed salad with a vinegar-y dressing is a classic Korean side-dish, so anything Korean! The first things that come to mind: a miso soup, or roasted whole fish, or fried tofu with a soy-based sauce. Or a soy/sugar/garlic marinated chicken thigh broiled with a side of rice. Mmm...

I tend to do a kind of bibimbap style bowl with rice, kimchi, meat (galbi-style beef or chicken), seaweed salad, and then usually a sautéed green (either kale, spinach, bok choy).

Or I make an Asian style soup and have it as a side with kimchi (we eat a lot of kimchi in this house). I like to make something like this:
http://www.pickledplum.com/kabocha-squash-recipe/The cold kabocha is usually more of a side but I like to serve it cold in the broth in the summer on hot days as a cold soup (maybe adding soba or somen noodles if I want something heartier). I usually make a dashi or a Korean style anchovy broth but my husband isn't the hugest fan so sometimes I just do a plain chicken broth.
