I'm a big fan of almost any cheese, although I must admit that bleu cheese isn't a favorite. My favorites are very sharp white cheddar and herb blends. When we first started dating, DH even bought me a cheese of the month club membership. There were some really stinky ones, but they all tasted so good!

Brie, Vermont white cheddar, Goat and Muenster are among our favorites...I also like having bleu and Gorgonzola in the house to crumble into spinach salads.

I eat mild cheddar on it's own but everything else has to be cooked in or on something

i'm alllll about goat cheese (when I'm not having food aversions). My favorite types are the herbed typed and the cranberry/cinnamon that tastes like Christmas. I tricked all my friends and family (at different times) into liking it by having it at parties and not telling people it's goat cheese--till later. Just because a lot of americans have a mental block against goat cheese, for some reason.
I also love brie. Most semi soft cheeses. Cheddars, jalapeño jack, and cojack.

I like pretty much all of them. I don't like feta or blue but otherwise they all rock. I'm also allergic to blue so that's part of my dislike for it.

Colby Jack. Haahah, seriously...but really...I like a lot of fancy cheddars (but nothing tooooo sharp), goudas, aaaand...string cheese. Yesss.

Balderson 8 year old white cheddar--- the stinkier the better!! And Goat cheese, and swiss for sandwiches. And brie for snacks. Oooh and Ricotta too, on pizza it's divine. And mascarpone in desserts.

I love most cheeses - I love smoked gouda! Our latest obsession was Norwegian brown cheese, or brunost/geitost. It is this incredibly wonderful/incredibly weird goat milk cheese. There is boiling in the process so the sugars caramelize and it's like this delicious sweetness. We eat it with thin sliced apples or strawberries. It's fairly terrible for you I'm sure so be careful because it is so addictive.

My favorites are extra sharp cheddar, triple creme cheeses like St. Andre, goat cheese, smoked gouda, gruyere, a good parmesan, havarti, brie, feta, cheese curds (sold as "farmers cheese" around here) and I really dig a lot of sheep's milk hard cheeses but I can't remember any names off the top of my head.
A good cheese plate is my ideal dessert. Yum.

@Bao: yes ma'am, and it's like $25 for a tiny little chunk. I'm still dairy free because of LO but my dad came over for lunch last week and I made him what I jokingly called a $18 grilled cheese sandwich. Sooo good.
@JerricaBenton: I just heard about this brown cheese on the radio the other day (apparently a cheese truck caught on fire somwhere over Norway (or that region I suppose) and it smelled kinda delicious according to the reporter!

OMG, CHEESE! I love cheese. Any kind. Although, I haven't had anything fancier than smoked Gouda, bleu cheese, and feta, but I'm sure I would love some stinky stuff. Actually, we just got a first-calf cow for a family milk cow and she's due to drop her calf any day now. The number #1 thing I am looking forward to about having all that milk on hand is experimenting with some simple cheeses!

Midnight Blue - Avalanche Cheese Co., it's a goat's milk blue cheese! Probably my favorite cheese of recent memory
Carmody - Bellweather Farms, an amazing grilled cheese cheese
Strawberry Peak - Snowy Mountain Sheep Creamery...for those of you who love the funk. But unlike many stinky cheeses, this has the flavor to match it.
