Bee taught me a celery trick: I chop it into smaller pieces, then dip it into a mixture of mayo + tabasco... delicious!

If you make smoothies, throw a stalk in each time - I don't taste it, but I don't have a huge aversion to it either

I'm not a celery fan at all so my only suggestion is make some bloody mary's Or like the PP said, make some veggie stock and freeze it for next soup season!

i loooove celery and eat it raw. But I also use it in lentil soup, stock, and green smoothies! you can't taste it at all.

If you make stock, you can freeze some of the celery in stalk form to drop in the pot later.
If you have carrots and onions, you can chop all three of them up together and freeze, instant mirepoix!

Send it to my house! I love celery. I like it sliced up in green salads or egg/chicken/tuna salad. I also like to chop it up fine and sauté it with onions & garlic and meat.

I'd feed it to my dog because I hate celery too, and it's really funny to watch her eat celery stalks.

Eat with hummus or dips
Make lentil soup (I never think it's too warm for soup though!)
Fill with cream cheese and drizzle hot sauce on it
I've never personally done this but I think it would work - chop celery, onions, garlic and carrots and freeze for quick soup preparation.

My snarky initial response was "throw it away!" I hate it too. I know it's terrible to throw food away, but I would never use it!

Slice it and freeze. Then any time you have a recipe that calls for diced celery you can just pull out the amount that you need. That's what I do with all my celery-- prep with a mandoline, put it into freezer bags, and then it's ready to go whenever I need it.

I hate celery too so I'd probably do what @Mrs. Twine suggests - cut it up and freeze to use in recipes. I do like it in chicken and tuna salad, so I would use it in that, but that's not 3 lbs worth!

Update:
Dog won't eat celery. Picky beast.
I threw a bunch in with some chicken bones, carrots, and onions to make stock.
I made a mirepoix to freeze for future use.
Had two stalks with peanut butter and raisins.
And I still have about 1.5lbs left.
I think I'll dice and freeze.

@Bluestriped Bee; Hells to the yes! Freeze that stuff. Obviously use it in things where the celery is intended for flavor and not for texture (like soups, stews, sauces; pretty much anything cooked). It saves so much time and energy, and it ensures that you always have that mirepoix staple on hand.

As a funny aside, there was a large bag of celery up for grabs in my teachers lounge after school!
