I would slice and cook it up in a stir fry and serve over rice or noodles

You can serve with anything you'd eat Korean food with - like rice and a salad with some Asian-y dressing like miso or ginger vinaigrette.
Or you can make a cold sesame or peanut noodle salad and serve it on the side or add warm slices of it on top.
The sweet/spicy flavor might be good with a simple quinoa salad tossed with tomatoes, cucumbers, peppers, and lemon juice/olive/salt/pepper.

Thanks ladies! I think I'll look for a stir fry mix or slaw mix when I go to the store this weekend. I have rice and quinoa. I would love to make a noodle dish but think I'm missing a lot of ingredients for that.
