Roasted sweet potato, mushroom, quinoa, and spinach hash with a runny egg on top, link sausage on the side. It was "technically" breakfast...my morning was weird and it was the first meal I had!

@T.H.O.U.: @grizz: I want to try and do this...do you put the dressing in there too? If so, bottom? Top? Curious what you guys put in them too. And how many do you make? Do they keep well for that many days?

Ummm...some pulled chicken, a few of Elliot's grapes leftover from his lunch, a string from string cheese (also left over from his lunch) and a handful of chips. Not a great lunch day for me lol.

@GrapeCrush: I am just learning! From what I have read you put the hardest, heaviest items at the bottom (so for me the chicken) and the lightest items (lettuce) at the top.
For now I didn't add dressing but I've heard you can. I wanted to see how the salad would hold up first. If you add dressing you add it to the bottom.
I made this one Tuesday night and ate it Thursday. It held up fine! My goal would be to make them Sundays and keep enough in the fridge for DH and I to get through Friday!

@T.H.O.U.: Starting at the bottom I do tomatoes, celery, bell pepper, cucumbers, mushrooms, spinach, then a baby lettuce mix. I bring my protein in a separate container. I need to think of some more stuff to add next week!
@GrapeCrush: I work 4 days a week, so I put 4 together on Sunday night. The one I ate today was just as good as the one I ate Monday I make my own dressing on Sunday nights as well, so I just put it in little tupperware cups. I toss it in right before I eat the salad, put the lid back on, and shake it up
