We had chicken enchiladas with avocado cream sauce (a pinterest find). I made it like 3 weeks ago but the recipe made so much that i froze half of it...I'm glad i did, too, because we are pretty much out of everything!

@Running Elley: When we were living with my SIL and her girls we had Taco Tuesday and Spaghetti and Meatballs Wednesday. TT was my favorite.
Maybe Chana Masala tonight, if I have chickpeas. Or maybe I could make it with black beans, I know I have those. Or maybe lentils. I don't know, but I think I'm in an Indian state of mind. Or I'll just make DH pick up a pizza, lol.

I signed up for an organic veggie delivery service and they sent me a spaghetti squash....which I hate. It does not seem like spaghetti to me. But, I like squash, so I am making a spaghetti squash-butternut squash-acorn squash soup!

@Mrs. Bee: here's a good spaghetti squash recipe: nuke for 10 mins in microwave, than saute it with a can of diced tomatoes, can of white beans and loads of garlic, you wont be disappointed.
We had stuffed peppers.

I tried a new, pretty easy recipe, Skillet Rosemary Chicken.
I followed the recipe but added some asparagus for the last 15 minutes the skillet was in the oven. Served with french bread. DH and I both really enjoyed it!

Just finished dinner. We herb crusted pork chops and sautéed beet stems. Kids also had zucchini and napa noodle soup.

We got delivery pizza: one was cream sauce (instead of red), with mushrooms, fontina cheese, pancetta and spinach. The other was house-cured pepperoni. Also got a Caesar salad with white anchovies. So carby, so good.

Trader Joe's tofu veggie burgers (I swear, they're tasty) with avocado and pesto mayo! Just realized that they are packed with iron too (60%!) so that's a nice bonus

Instead of fresh tomatoes, I'm using a shortcut by dumping in some "Naked Tomato Sauce" I made on Sunday: http://smittenkitchen.com/blog/2011/08/naked-tomato-sauce/
Also, using homemade vegetable stock that I made in great quantity a few weeks ago and froze.
I bought a big 30-lb box of tomatoes from a roadside stand on the way back from a camping trip this past weekend, and turned them all into sauce. Now we're canning most of it. It's so, so sweet, tastes like I added sugar even though it's just tomatoes and infused olive oil and nothing else.
