I made asparagus and goat cheese risotto. It was my first attempt at risotto, and I'm pleased to say I nailed it! Wasn't nearly as scary as I thought it was going to be.

I'm not sure! On Wednesdays we host our church home group at our house and the meal is provided by the pastor's family! It's always tasty and healthy but I never know what to expect.

ILs invited us to stay for dinner. Woo-hoo!
They made roasted chicken, mashed potatoes, steamed corn and broccoli.

@sarbear: I find risotto to be time-consuming but otherwise super easy--and super tasty!

@lovehoneybee: It is but if you start it first before anything else else then it's really not a big deal. You just have to constantly monitor it. We actually cook it a lot even on weeknights. It's a staple since M loves it and we can hide spinach in it.

@lovehoneybee: I was nervous with the two littles having impeccable timing usually on being needy when you're busy, but they did good. It got dicey at the end though lol

Spaghetti bolognese leftovers. I gave it to LO for the first time on Monday and she liked it so much she licked her highchair tray clean.

@locavore_mama: I only cook it on weeknights if it's after E has gone to bed, and on the weekends with D can take over toddler-wrangling.
@sarbear: Wrangling two kids? Go you! I make it 2-3 times a month...my favorite is mushroom, but I've also done with butternut squash puree and with asparagus. Yum.

We had spaghetti squash tossed with fresh mushrooms and spinach, and pasta sauce. I mixed leftover peas into mine (I peas), which SO found strange... he did not partake.
