Jerk Bowls ... Black beans, potatoes, pineapple, jerk seasoning, cilantro, avocado, and cashew cream.

@Mrs. Lemon-Lime: super simple - salt and pepper then a dredging in flour, brown butter in a cast iron skillet, pan fry in brown butter for 3-5 minutes a side based on thickness of chops. If you want gravy too, when they're done, melt 2T butter, add some onions if you have them on hand, whisk in 2T flour, scrape up drippings/scraps, add a splash of red wine and some broth, and simmer until thickened.

We baked some chicken with rice. Last night though DH made some zuppa Toscana (trying to mimic Olive Garden) and it was FABULOUS!

@kentuckygirl: just finished eating it! It was yummy, I might sub evoo for veg/canola oil next time though, I felt like I could taste the oil, and I didn't use as much as it called for!

DH is out and DD is asleep and already ate so I'm having spring rolls and battered fish, followed by ice cream. All from the depth of my freezer...
