We are hosting a Maundy Thursday dinner for church people. Its a mix of vegetarians and meat eaters and kids, and since its technically the night of the Last Supper (or Passover), I went with a Mediterranean theme!
I made a big Greek salad with cukes, tomato, feta, olives, and beans. Greek marinated chicken and falafel will be served on the side with whole wheat flatbread, hummus, and rice pilaf (kinda like homemade pasta-roni with the broken noodles in it). I'll make some yogurt sauce when I get home if I have time. I also made a pitcher of frozen grape juice to use for Communion.
Dessert will be ice cream sandwiches.

@Raindrop: First time! I'll try to remember to report back on how it is. We gave our first attempt at feeding DD a clear broth-based soup (much more logistically challenging than a blended/cream-based soup) this week, and it was messy but she loved it and started to get the hang of swallowing the broth off of a spoon. Hopefully she likes this one too.

We're having spaghetti with meatballs. Sauce and meatballs from the freezer so all I have to do is cook the spaghetti!

@gotkimchi: Tamale pie is soooo good! I make this one (http://pinchofyum.com/chicken-tamale-pie) with the Jiffy cornbread mix as the base. I'm sure yours will be better with the masa, but if you like it and are ever looking for a quick and easy option, this one is pretty good too.
We are having lasagna that I pulled out of the freezer. Thank goodness I got a few freezer meals made before DD2 arrived.

Thinking about repurposing leftovers into a cheesy spaghetti and meatball casserole. Spaghetti, chopped up meatballs, corn, peas, top with provolone and bake.

@Mrs. Pickles: It can be a little spicy with the chiles in the cornbread and if you use a spicy enchilada sauce. But when I've attempted to serve it to DD, we've skipped the chiles and used a mild sauce and then just put a spicy green salsa and sour cream on top to give more heat for us.

@Cherrybee: Boo you have GD too! But roasted veggies are yummers too. When I had GD I had bad craving for pasta I don't think I would have been able to let DH and LO eat pasta while I was having veggies. ha!
