I made a beef stew, which didn't turn out as great as I hoped for but it was good enough!

Leftover baked salmon and cauliflower...my husband is on a diet and so he doesn't eat carbs (I eat them when he's not home)...he's lost almost 20 pounds in a month!

I'm going to bake some chicken breasts and have it with corn and a salad.

Tonight is just a red-lentil dal recipe that I love, with rice.
Last night we did this smashed chickpea salad sandwich and it was amazing! http://everybodylikessandwiches.com/2011/10/tangy-lemon-smashed-chickpea-salad/
The night before that was a whole bunch of farmer's market goodies - squid ink tagliatelle pasta with olive oil sauteed with fiddleheads, wood sorrel, broccoli rabe, asparagus, and lots of green garlic. I love spring veggies.

We were supposed to have Gyros but the restaurant that we go to was closed while they prepare to move to a new location. So, we went to McDonalds because I was starving. Oh well!!

Whhaaaaaaa husband is out of town and I have no motivation to cook for just me. I will probably just make soup or something.
