Then I baked a apple crumble pie for dessert. He's not a cake kinda guy!

I'm going out to dinner for a friend's birthday, I made chicken enchilidas for DH and LO so all they have to do is throw them in the oven to cook!

We're having leftover butternut squash/sweet potato/carrot bisque. I made it for our anniversary last week at DH's request (we served it at our wedding), and he immediately asked for it again.

Played it kinda easy tonight. Made pasta and a sauce made out of blended chickpeas, garlic, lemon juice, olive oil, margarine and nutritional yeast. Added some spinach to it. It was ok but I feel it lacked something. Got it off Pinterest.

@TheSwissWifeStyle: I make a similar sauce sometimes but add crushed red pepper and a little bit of stock (chicken or veg).

Butternut squash mac and cheese.
I also make bnut squash risotto and have had good luck just roasting it and cubing it and then just tossing it in. easier than pureeing to me.

@lovehoneybee: you cube then roast?? How do you cube? In Acorn squash the shell is so hard. Easier with a butternut or spaghetti squash.

@locavore_mama: Shoot, sorry, I was thinking about sweet potatoes! With the squash I just cut them in half, roast, and scoop out the flesh when it's tender! I've never used acorn squash, though, are they easy enough to cut in half?

@lovehoneybee: Yea, that's what I do. The shell is kinda hard so I wouldn't want to cube it! You can't really peel it like you can with spaghetti or butternut.

@locavore_mama: I've done it both ways, but this time I just roasted and cubed it. With acorn squash (or any type, really) you can cut it into strips and roast with the skin on, and it'll peel off easily once the squash is soft -- then you just dice up each strip. I prefer cubes because sometimes the purée makes it seem a little too sweet for my taste. I also have some Swiss chard in the fridge that I'll probably chop, steam, and mix into tonight's batch.
