I'm thinking homemade mac and cheese with quinoa pasta. Maybe roasting some sweet potatos and squash then puréeing to add to the cheese sauce.
What about you?

Oh delicious! I have a milk allergy and one of the only things I really truly miss (it developed over time so I got to enjoy all things dairy before :() is homemade mac and cheese. Yum.

@HLK208: Lazy version of mac and cheese + peas + tuna. It sounds awful, but we ate it growing up and I love it. Still hate tuna noodle casserole, although I can't really explain how they're all that different. Haha.

I get to have dinner by myself because DH is working late I had left over white shelled macaroni and cheese with truffle oil- amazing! Adding truffle oil makes anything amazing though.

Beef stew. Except it's been in the crockpot for 6 hours and the potatoes aren't soft yet.

@IRunForFun: That sucks. I never have luck with potatoes in the crockpot...it's gotten so I just boil them up separately and stir them in at the end. It takes a few extra minutes but at least I know they're actually going to taste good!

@PurplePeony: Yeah, this is actually the second time I've had issues with the potatoes not cooking fast enough in the crockpot! I actually just transferred the whole stew onto the stove to boil for a while. Grrr.
