I'm trying to determine what I need in a diaper bag, but to so I'd like an idea of what I need to carry including the not-so-obvious things I haven't thought of.

Liv is 14 months now, but as an infant I always had
*an extra onesie (usually a footie one) and socks
*my hand pump and a bottle
*diapers/wipes/EMAB Bottom balm
*granola bars (for me. I was always starving)
*ring sling (if I wasnt already wearing her)
*a few plush toys when she got older
She never took a paci, but I always kept one with me because I thought I needed it lol
Those were the essentials for me. There wsa a lot of other crap in there, but I didnt NEED most of it (besides my wallet)

For baby:
-3 bottles
-formula dispenser
-burp cloth
-change of clothes
-wet bag
-diapers
-changing pad
-wipe case
-a couple small toys (usually Sophie and a small rattle or vibrating teether)
And then I also carry my wallet, keys, chapstick/lip gloss, gum, etc.

I then carry a separate cooler bag with her milk
On certain days I add more or less items to the bag such as bottles,water, gripe water, saline spray etc depending on where we are going and if LO is not feeling well.

binder clips - got this tip from Mrs. Bee - can be used to clip a blanket onto stroller/carseat/yourself!
And now that the weather is changing, will probably add a sweater and hat, and maybe a toy or two as well since LO is getting more interactive.

Mine is similar to pp's but we also have:
Teething tablets
Gas drops
Teething ring
Sophie the giraffe, usually it goes everywhere with us
Pacifier clip
Nursing cover
Eucalyptus and mint hand cream (my hands get dry from sanitizer)

All great suggestions above...in the early months, I bought an extra tube of lanolin and kept that in my bag because I was diligent about applying it after every single time I nursed. We also use disposable diaper bags to throw dirty diapers away in if we're at a friend's house so we don't have to worry about stinking up their garbage. They have come in handy as a wet bag, too, in case we have to change outfits and bring home a messy one!
