I'm planning on making my very own recipe of cinnamon swirl pancakes with cream cheese topping. I might add some eggs and hash browns in too, but our kitchen is the size of a postage stamp so it's hard to make more than one thing at once. When I want to cook a proper meal I use my Mom's kitchen!

Yum! Owe are having an overnight French toast casserole and another casserole that has meat, potatoes, eggs, and not sure what else. I'm making the French toast and just finished prepping it now. I'm topping it with fresh berries, but will prep those in the morning.

I want to make quiche but my hubby is allergic to shrimp and to me, that's the only good way to make a quiche. Like my Mama's. Oooh cinnamon swirl pancakes...care to share? That sounds awesome.

I'm going the lazy route-Pillsbury's Orange Danish rolls, and some link sausage to toss in the oven. Stuff of champions, I tell ya.

I wish my husband liked breakfast! We never have anything but I'm sure that will change next year when the kiddo is old enough to wake up early and want to eat and open presents.

I honestly don't have a real recipe, I just made it up as I went along the first time and then just went with my memory.
Basically, I made regular pancake batter and then I mixed some cinnamon, sugar, and melted butter together into a thick syrup. When I pour each pancake into the pan, I take a spoon full of the syrup and drizzle it onto the pancake in a spiral. It sinks into the pancake and then caramelizes when you flip it.
The topping is cream cheese, whipping cream, and maple syrup mixed together.

We'll probably end up doing either waffles or eggs, depending on what I'm in the mood for. When we have Christmas w/ my aunt and uncle they always make homemade breakfast tacos, including homemade tortillas. They're to die for.

This year was not a normal year for us, my Dad had a full knee replacement on Monday and is in a lot of pain. Usually we go to my parents for Christmas day and have a Christmas quiche with crab or ham and cheese croissant sandwiches. This year I didn't cook breakfast and we didn't go to my parents, his pain management pills make him sensitive to sound. I suppose we'll make up for it soon, we have a prime rib in our fridge waiting to be cooked!
