Since they're already cooked, I'd probably just thaw them, season and eat. If you want to make a meal out of it, you could warm them up in broth and add some noodles, or you can make my favorite quick supper, lemon butter shrimp with pasta.

@MrsBrewer: we cook them up in a little tomatillo salsa, and then make a spicy cabbage slaw with cabbage, carrot and onion, and have that with the shrimp and avocados in warmed tortillas. So good, very quick and easy to make.

Sure! It’s an easy recipe to make your own, and we just use what we have.

For the salsa, Frontera brand (Rick Bayless) makes a good jarred tomatillo salsa, and some grocery stores also carry a canned one in the ethnic aisle that’s fine too. It’s also easy to make: roast tomatillos with garlic and jalapenos or Serrano peppers, then blend with cilantro, juice of 1 lime and about a cup of chicken or veggie stock. The homemade kind freezes very well, so you can make big batches at one time.

For the cabbage slaw, just shred (or dice, whatever your preference) green cabbage, carrot and onion. I usually also do a squeeze of lime juice over the top and a little bit of salt and pepper. You can make this the night before if you want and refrigerate.

Then just quickly cook up the shrimp in a little salsa, cut up an avocado and fill warm corn tortillas with the shrimp, avocado and cabbage slaw! They are very tasty and light. Usually on the side we have refried beans, and/or more of the cabbage slaw and mix some tomatoes and corn into the slaw to make it more of a side dish.
