Without a doubt, my favorite muffin is a good ol' fashioned blueberry muffin. If I could have one every morning with a cup of coffee, I would be a happy camper.
Sadly though, I'm abstaining from wheat these days. Nooooooooooo............. why must all the great things in life be jam packed with wheat?!@?!

@mrbee: I concur! Wheat AND sugar!! My favorite muffins are those huge fluffy ones from costco and they have HFCS in them

@mrbee: are you keeping away from Gluten Free stuff too? Udis makes a pretty mean Gluten/dairy/soy free Bluberry muffin that I'll eat when I'm having a craving for something fluffy and sweet

@mrbee: especially the ones made with rice and potato flours. If you make your own GF foods, with coconut and almond flours it's so much healthier! but it does take a lot of extra time and effort.

@mrbee: That they do. I buy a 4 pack and freeze them individually and they are my go-to food when I'm about to cave on my MSPI/Gluten free life. Kind of like a 'break in case of emergency' type deal.

I LOVE the jumbo chocolate 'muffins' from Costco, but they're giant and terrible for you. I also love carrot muffins or corn muffins.

@Mrs. Pen: I usually eat muffins that have just been made at a cafe or bakery... I don't believe in store muffins. They are against my religion!!
