I usually just subsitute brown rice w/quinoa (cooked in chicken broth) in my stir-fry, boring but good.

DH and I like to combine it with chickpeas, black beans, chopped celery, and a bit of salt/mayo. Makes for a wholesome bean salad with a really fun texture!

It was pretty good, but next time I'd take it easier on the balsamic. I did add an extra avocado, because it's my favorite part. Oh and it made a TON. You could probably halve the recipe and still have a lot of it.

I love quinoa! We use it in place of anything that would normally do rice. Tonight I'll use it with marinated chicken, green pepper and onion for stir fry
