I bought a spaghetti squash the other day to make PaleoOMG's spaghetti pie because I'd made it once before and thought we'd enjoyed it. DH saw it was on the menu this week and I can tell he wasn't completely excited for it - he admitted it wasn't a favorite.
That's the only way I've used spaghetti squash so I need a new idea! I don't want it to go to waste.

I just heat it in the oven (cut in half), shred and top with homemade turkey meatballs, olives and pasta sauce

I just substitute it in for pasta with tomato sauce with ground turkey. I use about twice as much meat in the sauce though to make it a bit heartier. Lots of parmesan cheese I really love it but dh just tolerates it.

I'm trying it for the first time tonight! I'm making sausage lasagna stuffed spaghetti squash. It's probably pretty similar to the spaghetti pie.

We usually just do it as pasta with red sauce. This week, we're doing a simple version with butter, garlic (put on before roasting ... more after), and some parm & pepper to top it. It's just a yummy, creamy, garlicky dish. For protein, we use chickpeas or veggie meatballs.

I've seen recipes for like a cheesy spaghetti squash bake thing, let me try and dig up the recipe!

We eat it as a side dish in my family. Just halved and roasted, with olive oil and sea salt.

I roast in oven, shred, mix with my favorite pasta sauce, italian seasoning & parmesan cheese, stuff back into the squash half, top with mozzarella cheese, and bake until cheese is bubbly.

(Poor guy came home Monday and asked what was for dinner. I told him lime Dijon mayo chicken and he sighed with relief and he told me he'd been dreading spaghetti squash all day...)

@Vegmama: I know you're vegan so it's not as though you guys eat meat anyway but sometimes I really just want to eat only a salad. Or something like black bean soup. Or something light on the carbs and meat! Spaghetti squash fits that bill for me but.... men. Gotta love them.

My husband isn't a fan, I make it for me and DD and make him some pasta. I just tread it like I would spaghetti, serve with a meat sauce or olive oil, red pepper flakes, and parmesan cheese.

I like to mix it with EVOO, fresh basil, diced tomatoes (or halved cherry tomatoes), and feta.
