The meal I make when I don't feel like cooking is usually roasted salmon with roasted broccoli or asparagus--everything goes on baking sheets covered with foil so there are no dishes to do! And barely any prep work.

Tacos for me, too!! I use ground turkey. I made them last night. And I make extras and wrap them up individually in tin foil for lunches the next day.

@Bao: Oh yeah, frozen pizza is another staple! We usually keep one in the freezer for lazy, no-cook/effort nights. Taco requires minimal cooking/effort

Tacos is probably our first go to if nothing is really planned. We almost always have all the ingredients in the house. If not, chicken breast and salad with a slice of bread.

Either spaghetti bolognese or an easy spinach-rice dish we like. They're both tasty and filling with minimal effort.

Usually enchiladas. Its one of the few meals that I don't need a recipe.
Biscuits and gravy if we don't have many groceries because we ALWAYS have those ingredients on hand. I can make them with my eyes closed and they taste SO GOOD (but are so unhealthy).
If we don't feel like cooking, we go out.

Tacos or fajitas are super easy and don't heat up the house too much. We also do grilled burgers (homemade bison burgers I freeze) with a salad a lot in summer.

We call it Everything Pasta. We make pasta with red sauce and then throw in everything we can find: grated carrots, zucchini, & other veggies, and beans or re-heated meat. If we've got frozen Costco tortellinis that's even better!

my go-to when I'm cooking for myself is whole wheat pasta or couscous with whatever vegetables are on hand and white beans, tossed with olive oil, lemon juice, herbs, black pepper, and cheese (parmesean, feta, or goat).

I make this salad at least once a week -- baby spinach, sliced almonds, dried cranberries, blue cheese, grilled chicken, balsamic vinaigrette. It's SO easy because in the time it takes to grill the chicken, I assemble the salad fixings and make the dressing and then it's ready to go! And, minus the cheese, it's pretty healthy!

Taco meat either for tacos, nachos, tostadas, burritos....you get the idea! I've found mixing in a can of pinto beans makes it extra filling and tasty.

Hamburgers grilled on George Foreman. I usually keep a couple hamburger patties in the freezer. DH will eat on a bun with sides or bun-less with a baked potato.

It kind of changes! Lately it's this Cambodian dish. It's stir fry beef with celery (but I add other veggies). Here are the ingredients
Steak or chicken strips
Celery
3.5 table spoons of fish sauce
2 teaspoon sugar
1 teaspoon salt
6 garlic cloves
Cored cherrie tomatoes (I like the gold ones)
I add onions and red peppers
Basically just get that oil hot on medium high heat and add the finely chopped garlic, let it cook 15 secs then add beef, let the cook 2 mins then add celery and onions, let those cook two mins then add fish sauce salt sugar peppers and slowly fold in the tomatoes. Tastes best served with jasmine rice! Yum!
