do you wash the rice?
Every other kind of rice I always wash it 2-3x. But I don't wash arborio. I think it's because it's not cooked submerged in water like others!

No, I don't. You want that starchiness to come off in the risotto.

Yep. Don't wash! It would be bad. I love risotto. Mr. T thinks it's glop, so I don't make it very often. I should make some this week since he's planting and won't know the difference. All us girls like it...

@regberadaisy: how do you wash it?? the rice would go right through the strainers I have, do you have a really small mesh one that you use?

@MrsBrewer: I just wash it in the pot/rice cooker, manually drain and repeat.
