I always put the shiny side up... I guess I feel like I paid for something to shine it, and I want my money's worth. Haha!
According to this link though, what makes one side shiny is contact with the steel rollers... so basically, nothing shines it and both sides work equally well:

Towards the food? So, if I'm lining a baking tray it's up and if I'm covering something, it's down.

I think my tendency though would be to put the dull side next the food and shiny side out.

Dull side for food contact when wrapping, but shiny side for all other food contact like baking!

I always put it shiny side up just cause it comes out of the package that way.

I use the side that was inside the roll on my food. So the part that was exposed to air doesnt touch my food.
