When I say that I'm going to watch what I eat, it just means I don't overdo it on my indulgences. Like for after dinner ice cream, instead of two scoops in my bowl, I'll have one scoop. I never really deny myself my sweets or treats.

It depends how snug my clothes are fitting. If they're really tight it means borderline no carbs and definitely no sweets. If they're just snug, then minimal of both. If they're loose...uhm, yeah, that doesn't happen.

For me it means that if I overdid it one day, I will eat a salad the next day. I never deny myself treats either. But I probably should!

Same. I've never been a person who could say I'm just not going to eat anything "bad" for x amount of time. When I'm trying to "be good" I primarily work on reducing fried food and sugar, increasing produce intake, and eating more "real food" vs. processed food.

I just do portion control and try not to eat dessert every night... that's a huge challenge for me!

I am someone who easily can eat a bag of Hershey kisses in 2 days, or will polish off a tray of cookies, so basically just eating reasonable amounts of desserts and bread

It means counting calories for me. I will still eat most of what I want, as long as I fit within my calorie goal.

Portion control, try to avoid processed foods, and cut out soda and for the most part junk food and sweets (but I do occasionally make popcorn on the stove or have a bowl of ice cream).

for me it means portion control, upping my veggie and protein intake (I'm vegetarian so I should always really be actively thinking about protein!), and cutting down on carbs (though I feel really crappy if I don't have any, so I still have to have some). Pasta and potatoes are my weaknesses, so really it's portion control of carbs that I need to be careful about!

This has varied widely for me through the years! But these days it means lots of lean protein, a salad and/or a soup before dinner to fill me up, and PORTION CONTROL. I can't give up sweets or I just go crazy bingeing on them. Eventually though I usually just give them up naturally after realizing I'm not craving them anymore.
but OH GOD, I could SO eat an entire plate of cookies.

On an honest note, as a former dancer who had eating issues, I eat what I want, when I want, and have less of a problem (and am happier) than when I used to obsess over calories and portion sizes.

I'll turn down sweets (or just have a nibble) and beer and really cut back on wine. I'll make a strong effort to make only healthy stuff, remove sugar from recipes, and eat more salads and veggies. It depends what my goals are, though. I can't honestly expect to lose weight if I actually still eat that crap, so....I don't.
Right now, I'm "watching what I eat" by following a 40/40/20 macronutrient profile. It's forcing me to eat balanced and very mindfully.
