WOHMs who commute...what do you eat for dinner?

    Serious meal-planning + making meals the night before whenever I can.

    When I first went back to work after maternity leave, we ate a lot of crap and ordered in a ton. But eventually, once our routine normalized a bit, I would meal plan on the weekends and try to focus on quick/easy things that I could cook while DH put DD to bed (we still eat after she goes to sleep...I am hoping as she gets a little older/stays up a little later we can make the switch to family meals but right now it is too hard to come and spend quality time with her and put a meal on the table all in like an hour's time).

    I would really like to make better use of my crockpot but most of the recipes I see call for cooking 6-8 hours on low and with commuting and working full time, I'm out of the house for 10 hours. Would love suggestions for dishes that hold up in the crockpot under extreme cooking times-- so many WOHPs seem to use the crockpot, they must exist!

    @Anagram: That's brilliant, I'd forgotten about those polenta logs!

    I am going to do some meal planning later on today, This week has turned out great because of some preplanning and I want to keep the momentum!

    I thought the crockpot would change my life, but it hasn't. Don't get me wrong, I still love it for pulled pork and pot roast, but it's not getting pulled out during the week, also because of our long commute times. I much rather the cook on Sunday/freeze method.

    Easy meals like spaghetti or tacos or grilled cheese usually, with takeout on occasion. I try to make a meal Sunday we can re-eat like chili or chicken broccoli braid.

    I eat after LO is asleep. Since I am solo I have DH grill me chicken on Sundays for the week. So I do salad, turkey wraps, saute some fish, chicken sausage, sauteed spinach, and leftovers from the weekend.

    @abmamma: i totally agree. quality time is way more important than eating meals together!

    @looch: i had the same feelings about the crockpot when i got it and it's been unused for so long. i think i'm also terrified of totally overcooked, dried out meat.

    @Smurfette: that's a good point - it will be way easier to make multiple meals/proteins at once on Sundays when we have a grill! right now it's like tetris trying to fit all the pans in the oven at once haha.

    We eat super easy meals and we also ted to push back LO's bedtime later than most people. We get home at 6:15, eat by 7-ish and then bedtime is 8:30.

    We do things like frozen TJ meals, spaghetti, take out, stir fry, etc. I think one thing I need to start doing is cleaning the chicken when I get it on the weekend instead of waiting until the evening I am cooking. That takes up the most time right now with trimming the chicken fat.
