I'm all about dates in my muffins. I don't have an exact recipe, but I'm thinking something like this:

@blackbird: That's what I was gonna suggest! yum, yum...

I buy the dried kind and I let them sit in hot water for an hour and made smoothies - four dates, some milk, some vanilla protein powder or vanilla extract, yum! I also make moroccan chicken with them. And I've put them in cookies and muffins in place of chocolate chips or raisins
