Anyone have a breakfast cookie recipe they love? We give the kids Belvita biscuits every morning and I want to move away from that! Plus, snow's coming so I want to bake this weekend

@mrs. wagon: I can only imagine what kinds of wonders could make up a BREAKFAST cookie! Following this thread!
Maybe I'll do some baking this weekend, too! DANGER!!

@ineebee: hehe! Looking up recipes it's mostly oats, applesauce, maple syrup for sweetness, flaxseed, banana... some use peanut butter... I may just do a bunch of batches and see what comes out best!

You mean...not cookies you eat for breakfast?

@blackbird: those are totally cool for breakfast, for mommy to sneak in the corner and jam in her mouth by the handful while the kids eat ...something else

@mrs. wagon: So that doesn't only happen in my house, eh? LOL. It's like they have a goddamn radar for that stuff. I can be two rooms away, unwrap a mini kit kat bar, and look down and E is there with her mouth open and her hands outstretched, making grunting noses at me to SHARE. But i guarandamntee you, if i had a carrot stick, she wouldn't even care.

These are pretty good. I use quality, organic grassfed butter when making them to ensure we're not loading up on bad fat.

This is the recipe I use! I add a tablespoon of peanut butter and a handful of chocolate chips or raisins too. They are so delicious! http://www.theburlapbag.com/2012/07/2-ingredient-cookies-plus-the-mix-ins-of-your-choice/

@blackbird: LOL!!
@mrs. wagon: I don't have a recipe, but I'm totally baking during the snowstorm tomorrow!

@coopsmama: I used this recipe and they turned out great!! I loved that there was zero sugar (except for the chocolate chips and honey). I stored them in a ziplock and they turned into kind of muffin-like consistency... I wonder if I can dry them out in a warm oven to get them crispy again. Although they are still delicious like this

@mrs. wagon: yay!! I'm glad you liked them.
I appreciate that blogger's recipes because they tend to be lower sugar or none at all.
I don't know how to remedy the fact that they got so soft but I imagine it's because of the honey providing extra moisture? A dry oven sounds like it could work though!!
