Looking at pillow options for my 17 month old -- I've never seen a buckwheat pillow in person... do you think they'd be good for a toddler? He adores ours, but they're way too poufy.

The nice thing about buckwheat pillows is that they are usually adjustable, meaning you can physically remove some of the hulls to make it flatter. However, I've read that they can give off some dust (which can clog pores) as the hulls rub against each other. I was interested in getting one for myself until I read that...
Also, I'm not sure how toddler-proof they would be since you can open them up to remove the hulls. I suppose you could sew multiple pillow cases to discourage messing around with the interior one that zips up the buckwheat hulls.
