I need some advice on knives!
So we've been married for 4 years have have this ancient crappy knife block with horrible knives. We've decided to finally upgrade! I need your suggestions on brand/type of knives to get.
We don't need to get a whole set, in fact, I'd rather spend $$$ on ONE really good knife I will use all the time (and just buy a cover for it and keep it in a drawer)
So give me your suggestions!

My favorite knife is a store brand knife (Fantes), which is made in the same place that Wusthof knives are made. Wusthof is my favorite big brand. I really suggest going into a kitchenware store and asking to hold their knives. I used to work at one, and some of the higher-end knives just didn't sit comfortably in my hand. The weight felt unbalanced.

We have Globals and love them. I would recommend going to Williams-Sonoma where you can handle the knives and see what style and weight feels best to you!

I have Henckels "forged synergy" knives, a chef's knife, santoku knife, paring knife and bread knife. I like them a lot. I also have a chef's knife and utility knife from Rada, which were pretty inexpensive but the blades are super sharp and they seem to be holding up really well.

I don't know a lot about knives, but I think you are on the right track spending your money on one or two (or three) knives than a whole set. We have a great 8" chef knife, santoku knife, and bread knife (Wusthof and JA Henckels) and we've been really happy with them.
We also received this set for our wedding. We use it a bit, but a single paring knife would work just as well.

I have a Henkles (the kind with two men on the blade, not 1) and they are good, but my mon has a Wusthof chef's knife and that's an awesome knife.

We have both Shun and Wusthof knives, and I would say that I love my shun blade much more than the wusthof as it just seems has a cleaner cut IMO. But as others have suggested try to go in somewhere like Williams Sonoma so you can try holding the knives etc. that way you will know if a knife is too heavy or too light for your taste before you buy it. Shun also has a free lifetime sharpening program where you just pay for shipping and they will sharpen your knives for you too which has come in handy for us. If you are going to buy a good blade make sure you also have a good cutting board as well as think about sharpening it so it can last.

Globals, Wusthof, and Shun are great knives. Wusthof tend to be forged meaning that they're a solid piece. Globals are beautifully light and weighted nicely. You really only need a good 8 inch knife, bread knife, and paring knives to be appropriately stocked. I would recommend getting plastic sheaths for knives instead of a block.

I will be totally honest: I have a set of really fancy, very expensive Wusthof knives and these are the three knives I use all the time (and almost never use my fancy knives because, frankly, they aren't as good):
They were all rated more highly by "Cook's Illustrated" (my bible) than the Wusthof's. I would start by making a small investment in these and see how you feel? I like that I don't have to worry too much about them because they are completely replaceable.

Crate and barrel actually has representatives from the companies in store occasionally and it's great to hear from them what makes each type better/different. Plus, it helps to feel them in your hand. Good luck in your search!

I think a store like WS is great to test out all the different brands and see which ones work best for you. But I would not buy from them because they're expensive!
We got our starter Wusthof Classic of Overstock of all places. And we have built on it through the years through our wedding registry, Macy's clearance aisle and once in a while home goods!
Keep in mind though each brand has a different line and some lines are better than others.
Personally we have used Wusthof, Global & JA Henckels and we vastly prefer Wusthof.

We have global and love them! We only have 3: a santoku, vegetable, and paring. We also have a good pair of kitchen shears which are wusthof.

We got a set of Wustof Classic knives as a wedding gift and I love them. The knives we use the most are the 5" santoku, paring and the bread knife.

My favorite is an 8" shun chefs knife. I made the switch from German brands to Japanese and have found that they hold their sharp edge longer plus I like the weight.
I also have a shun pairing that I use often and an off brand bread knife that gets a lot of use.
