I use semi sweet instead of milk chocolate chips. Use the butter flavored shortening. It makes them such an amazing texture!

I don't use Mexican vanilla. Just make sure you use real vanilla, not the imitation stuff.

@T.H.O.U.: my MIL'S look like that. She replaces some of the flour with oat flour (oatmeal in a food processor) and stirs them gently for a loooooong time. Other than that I think her recipe is a pretty standard one.

The NYT cookies are amazing, but if you want cookies asap (those need to sit overnight), these are really great too. They use brown butter and it really elevates them.

@T.H.O.U.: oh, I see...Alton brown had a chewy chocolate chip cookie recipe, it melts the butter.
I used to live down the street from Levain when I lived in NYC and i loved those, omg!

This is our default, and it is seriously the easiest thing to make. No creaming butter/sugar, just dump it all in the mixer at once and go.
2 1/4 c flour
2 c (softened) butter
1 packet of vanilla pudding mix (or whatever flavor you want!)
3/4 c brown sugar
1/4 c white sugar
1 t salt
1 t vanilla
1 t baking soda
2 eggs
1+ c chocolate chips, or reeses pieces, or whatever mixins you want
Mix together in the stand mixer, bake at 375 for 9-10 minutes. SO good. So easy.
