@Mommy Finger: generally speaking for all cookie baking—spread is caused by 2 things—using butter and not something else like crisco or lard; the dough being room temperature or warm. Basically, if you use butter (which I like to use, for taste), you have to chill your dough. For cut out cookies, you may even have to chill twice—once after making the dough and again after cutting out the cookies (like throwing the whole cookie sheet in the fridge).

So far I've made sweet and spicy pecans and some chex mix. My main Christmas baking thing is my grandfather's shortbread, but it's such a hassle that I have to build up the motivation to undertake it, as well as find a free afternoon that I'm willing to dedicate to cutting out tiny shapes.

I always make green tree cookie press
Spritz cookies, and Mexican wedding cookies. I might add a shortbread this year too along with toffee. Yummmm now I want cookies
