Here's my recipe:
Purchase box of Velveeta shells & cheese
Open said box and add to boiling water
Once it's done drain and add overly processed yet delicious cheese sauce
Eat that shiz!!

Do you know how to make a bechamel sauce? If I am feeling fancy, I make a bechamel with a white roux and milk. Then I stir in shredded cheese until it melts, pour over cooked pasta and then transfer the goodness to a baking pan and bake until the outside gets golden brown.

Mine comes out rather cheesy and creamy. I use at least a 1:1 ratio pasta to cheese.
My most recent super creamy concoction was this:
16 oz total split between sharp cheddar and gouda
Half cup whipping cream
1 egg (whisk)
12 oz cooked macaroni
after draining the pasta, add egg & any seasoning you want
On stove top, stir in the shredded cheese and cream
then add pasta for a few last stirs
place cheesy pasta mix into baking dish
I always top with something, but I don't know if that helps with keeping the mac & cheese creamy.

@Smurfette: A bechamel sauce is one of the mother sauces, you basically melt some butter in a pan, and then add in a few tablespoons of flour and stir. When it becomes pale yellow and holds together, add in warmed milk and then you stir until thickened. Once you have it thickened, you add in the shredded cheese and stir until melted. It's a great way to make mac and cheese because the cheese won't get stringy or separated.
But in truth, the way I make mac and cheese for my son is to melt a wedge of Laughing Cow cheese in hot pasta, so....

I second the bechamel cheese sauce. It sounds hard, but super easy and very creamy! The trick is to keep whisking and keep the heat low.

@looch: this is how my mom makes it and its good but not creamy compared to Kraft mac-n-cheese.
My kids will only eat the Kraft and I am trying to get away from artificial colors when I can (Tried Annies and one from Trader Joes and they didn't like it)

@Smurfette: I have an awesome recipe from my friend's grandmother. It is TO DIE FOR. I'll send it to you tonight when I get home. And shockingly, I actually know where it is! One of the first things I unpacked!!!

In college, our sorority cook made mac and cheese with velveeta, milk, and butter. It was pretty creamy
@looch, I do hot pasta with chive and onion cream cheese for E in a pinch, HAHA! Great minds

@Mamaof2: Don't compare it to packaged mac and cheese, you'll never get the same results unless you used processed cheese food, like Velveeta.
I boil the pasta, usually the small elbows or shells. Drain well and then I add in a lump of butter and a bit of milk. I then just stir in the laughing cow. It's how my mom made it for me when I was little!

The Ina Gardner recipe on the food network site is amazing and creamy and delicious. Very high fat of course. It's pretty easy, though not as easy at lawbees.

haha @Mamaof2: I am never making mac n cheese for my nephew from scratch ever again. I painstakingly made him from scratch mac n cheese last time because he LOVES it. Was he a fan? Nope. What does he like more? Kraft Mac N Cheese or Panera Mac N Cheese. What an insult! Hehe
