I am looking for some crock pot summer meals! When it gets hot and humid I don't feel like spending time in the kitchen cooking. I have lots of crock pot ideas for soups/chili's/and winter comfort foods...but would love some more summery foods! Any idea?

Ditto! I am not a fan of turning the oven on when it's hot out!
I make bolognese in the crockpot! I know a lot of people make pulled pork in the crockpot...but that's kinda blasphemy to me because pulled pork is supposed to be smoked.

Pulled pork tacos!
I make the Boston butt roast in crock pot with onions, green pepper and green chillis
4-6 hrs on high
Shred and serve on corn tortillas with cabbage and feta
Maybe a cold corn salad to match?!
Mmmm

I make salsa chicken! Chicken breasts, taco seasoning, onion, and a jar of salsa. Cook on high for 4-6 hours and then shred it with a fork. It's so yummy!

Minestrone is a summer soup to me (it's basically carrots, potatoes, string beans and zucchini cooked in chicken stock).
Also, anything with chicken thighs is great in the crockpot.

@looch: ooh chicken thighs with some pineapples, veg and like a sweet/sour sauce could be very summery. My only problem with the crockpot is it needs to get plugged in at 8am and by 6pm even chicken thighs are dried out!

I do pulled chicken - 2 lbs of chicken (I do a mix of breasts and thighs), 1 cup bbq sauce, 1/4 cup Italian dressing (or water if, like me, you don't keep it on hand), 1/4 cup brown sugar, 1 tbsp Worcestershire. Mix it all up, dump it in the crockpot, cook on high 3-4 hours, shred with forks and then it can sit in the crockpot on warm until you're ready to eat it.

Chicken breasts and a jar of salsa verde. Then use that as taco filling. Soooo easy.

Bbq pulled pork or chicken. Salsa chicken or shredded beef.

This is our current favorite: Kalua pork and cabbage. http://www.tasteofhome.com/recipes/slow-cooker-kalua-pork---cabbage I just buy a bag of cole slaw instead of chopping up the cabbage, and I add a couple splashes of liquid smoke. We eat it on rolls with barbecue sauce, top it on rice with hoisin or soy sauce... it's delicious!

We just did Beef and Broccoli in the crock pot (well the broccoli and rice is separate but thats easy).

@regberadaisy: Yes, DH has banned me from chicken breast in the crock pot because it gets way too dried out.

Not too exciting- but versitile! I poach in the crock pot 5-6 chicken breasts every other week, then we use (and freeze it) shredded for chicken tacos (squeeze lime, add topping, go!), cubed for chicken salad (celery, mayo, tarragon), added to curries, plain for my dd, etc, etc.
