did you bake or buy your LO's bday cake?

    I baked and I don't bake. LO has a bunch of food allergies and it definitely motivated the decision, but I'm also happy that I was able to do that for her. But it definitely wasn't pretty.

    I don't have an LO yet, but I will always bake his/her birthday cake, just like what my mum did for me.

    I wanted a specific cake which I wouldn't have been able to do because I don't use fondant so I had a baker make it for me.

    I love to bake so I want to make it a tradition to bake all our kids birthday cakes each year! Well at least until they're adults and want a fancy shmancy bakery cake .

    @locavore_mama: we put them in cups and wrapped in cellophane so it was easy to transport.

    If you need info on where I got the liners and straws tell me. They were actually cheaper on etsy

    @lovehoneybee: @T-Mom: LOVE both of your rainbow cakes! I want to attempt this for A's party but just wondered, how far in advance did you make your cakes? Did you ice them the day you made them or the day of the party? How did you store them? Trying to weigh up whether this is in my skill set, ha

    Baked! Totally from a box. And can frosting I died with frosting dye.

    @travelgirl1: I baked mine a day or two in advance and I froze them. I also made the icing several days in advance and kept it in the fridge and whipped it up before decorating. I assembled and decorated the day of. The cakes defrosted quickly while I was assembling since the layers were pretty thin.. The assembly and icing was actually the easiest part for me..the hardest part was getting the batter to the colors I wanted. Took a lot more food coloring than I anticipated and was time intensive. Good luck! It's definitely doable!

    @travelgirl1: I baked the layers a week or two before, double wrapped in plastic wrap, then foil and froze them. I moved them, still covered, into the fridge to thaw the night before I wanted to use them.

    I frosted it the day I used it, because the frosting I was using had a good amount of Greek yogurt in it and I wasn't sure how well that would do being frozen and thawed. I remember reading that some frostings are fine in terms of icing the day you make them and then freezing them, but I can't remember what kinds, sorry (but I'm sure it'd be an easy google search!)

    @T-Mom: @lovehoneybee: Thank you so much! I just did a trial of three layers last night and the colours were great but I guess they were a bit thin, they came out a bit dry but with a nice taste. I'm thinking to try thicker layers. What size were your layers? Did they come out nice and moist? I did 20 mins cooking time but I think it was a bit long.

    @travelgirl1: mine came out a bit dry too Actually the cake was more dense than dry. Tasty though. Not sure if it was me or just the recipe.. My layers were maybe a little over an inch thick? Thinner than i expected. Perhaps if I had whipped more air into them before baking, I would have has better thickness. It took a long time to tint the batter, so I think I lost a lot of volume during that process. Smart of you to do a trial run!

    @travelgirl1: when I did my cake I made the layers very thick (accidentally). If the recipe says to bake in 2 tins for X minutes, could you lower the baking time by how many tins your actually dividing it into? (So, if you do 3 tins, then reduce the baking time by a third?) I also found that I had to compensate liquids - I was adding 2-3 Tbsp of dye (I did natural ones), so I had to take out milk.

    @T-Mom: I had a lot of air in before doing the colouring - I wondered whether to whisk them again for a bit after colouring to get the air back in...

    @JoyfulKiwi: The recipe was for 4ins tins and I used 8ins so yeah I should adjust the times : )

    I'm planning to bake a 3 layer cake for the adults as well as her smash cake. Hoping they come out OK!
