Turkery burgers with yam fries tonight.
Earlier this week we did homemade grilled chicken w/diced tomatoes, grilled zucchini & red pepper, and tomato/garlic puree in a wheat pita pocket.

grilling is always easy--salmon, steak, chicken.
pasta's easy too.
@rubies' chili recipe is easy too! I took out some of the ingredients and it was still REALLY good. Will * the ones I left out.
1 lb ground beef
*1 chorizo sausage (optional - I just use it for the flavour, take out of the casing and brown it with the ground beef)
*2 stalks of celery chopped
*2 jalapeno peppers chopped (with or without the seeds, depending on how much spice you like)
1 bell pepper diced
1 onion chopped
1 cup corn (I use frozen, not canned)
1 19oz can of kidney beans, rinsed and drained
1 28oz can of diced tomatoes
2 tbsp of chili powder
*2 tsp of oregano
ceyenne powder (optional - for spice factor)
salt and pepper to taste
1. Brown the meat and drain fat, set aside
2. In a large pot, saute all the veg (except the frozen corn) until soft
3. Add in all the spices and corn, mix well
4. Add the meat, stir
5. Add beans and tomatoes, mix
6. Taste and adjust seasoning
7. Simmer on low for 30min-hour...Doesn't matter. If it's too soupy, just simmer uncovered until it thickens.
Tastes better the next day! This makes a big pot of 6 portions.

Taco night is always a favorite at our house. I also make a chicken pesto pizza that is crazy easy (probably because it's cheating and using all precooked food.... but you don't have to do that.). I get naan bread, pesto sauce, and put some chicken on it.

@mrsmenow: I'm so jealous!!! I love steak and gorgonzola together (steak gorgonzola alfredo anyone?)!! I don't think I can have gorgonzola now that I'm pregnant though, so I'm sooooooo jealous!

@Adira: I am substituting mozzarella in mine. DH will use the gorgonzala. I think if you are using it in a sauce that you will be heating you can stll eat it, but definately something to ask.

@mrsmenow: Good to know! I think the gorgonzola that's they put on the gorgonzola alredo (at Olive Garden) is sprinkled on after, so not heated up. And now I'm hungry...

BLT salad - just cook up some bacon, chop some tomatoes, throw it on some lettuce and add a bacon vinaigrette!

mm turkey anything! turkey tacos are delish, I only buy wheat pasta so I consider that with red sauce pretty healthy (I make my own sauce, it's DELISH..and no chunks..I'm so texture-sensitive).
we also make our own pizza, and I have a recipe that I love (from my grandparents) for a cheesy meat pie type thing. it's basically croissants in an 8-inch pan (to make a crust), a cup of mozzarella mixed with an egg in the bottom, a lb of cooked ground beef mixed with 1 cup tomato sauce, and sprinkle with another cup or so of mozzarella and/or cheddar cheese. if you buy the low-fat versions, it's pretty healthy AND delish! (25 minutes at 375, I think!)

I buy ready made gnocchi if I don't feel like making it myself.
Shrimp scampi is super easy to make as well.
