I've cooked roasts both ways but when I haven't browned it, it has still come out okay! It's nice to have one less pot/pan to wash!

@Weagle: I just did a reci pe that called for browning and I skipped it. It came out fine!

I always sear first. I just do. I think it helps with flavor.

@Mrs. Twine: me too. I also think searing helps with texture, it's so easy for meat to get mushy in crock pots (at least for me).

And I brown and cook in a Dutch oven (which can go from stove top to oven) so no extra dirty pan!

I only do it when I've got the time - I usually throw a roast in in the early morning when I don't have a lot of extra time or energy, so no browning I cook them with beer, pepperoncinis, and a packet of Lipton French Onion soup mix and they come out great.
