My triglycerides came down a lot this past year, and I think a big part of that was cutting back on red meats. The kids don't like red meat, so we have it maybe once a week tops? I do miss it, but only if I actively think about how much I love eating burgers or steak.
This whole transition has been a learning process, and hasn't been that easy. I've been trying to think of red meat as an occasional treat rather than a staple. I grew up on mostly chicken and fish, and those probably make better daily staples.
