@mrbee: So are you talking about high carbon steel?

I only have one knife. It's from Cutco. Not sure what its made out of - probably stainless?

I have two high carbon no-stain steel (a paring knife and a Granton Santuko, which is my favorite knife ever, from this line, which I LOVE: http://fantes.com/fantes-pro.html) and a Kershaw Kai Shun Chef's Knife (http://fantes.com/kershaw.html), which is a whole nice mix of metals .

The Fante's line is actually my favorite, and are relatively inexpensive, although the Shun knives are GORGEOUS. I used to work for a kitchen ware store, and had a chance to test out different knives, see how they felt in my hand, which I HIGHLY recommend doing. If you're ever in Philly, Fante's is an actual store in the Italian Market, and you can test their knives. But any kitchen store should let you do it. I found the Fante's knives to me comfortable in my hand than knives like Henckels or Wustof (although I think the Fante's knives are pretty similar to the latter.)

(Full disclosure, I used to work for Fante's, several years ago, but am not associated with them now...I just think they're a great store with great knives )
