ETA: I've found that a good rule of thumb for great banana bread is to add 1-2 more bananas than the recipe calls for.

I love banana bread muffins! This is what I use:
1 cup sugar
1 egg
2 cups whole wheat pastry flour
1/2 teaspoon salt
1/2 cup unsweetened applesauce
3 ripe bananas, mashed
1 teaspoon baking soda
1 teaspoon vanilla extract
Preheat oven to 350 degrees. Place muffin cups in muffin tins
Mix sugar, applesauce, and egg until creamy and light yellow. Add bananas and vanilla. Add flour, baking soda, and salt. Stir until completely smooth. Spoon the batter into the muffin tins.
Bake for 25-30 minutes, until toothpick poked in center muffin comes out clean.

Okay so can I not make banana bread with just 2 bananas? Lol. Maybe I should adjust the recipe I use to just 2 bananas and then make them into muffins instead of bread?

@Mrs.Someone: I just saved that recipe. I don't think I have the patience to roast the bananas and brown the butter tonight (I love recipes with browned butter in them...my absolute favorite is browned butter sweet potato casserole from How Sweet It Is...to die for) but I will definitely be trying this someday!

Yeah totally. The recipe makes two loaves I think! There's a calculator on the page, just make half and you'll have plenty!

@Running Elley: FWIW I've made the exact same recipe I posted with only 2 bananas and it was fine. I just forgot and ate one that morning. I have to hide bananas so we can make banana bread!!

Martha Stewart has a banana bread recipe with sour cream in it. I've made it countless times and it comes out super moist every time. The texture is just right.

Browned butter glaze is sooooo good too! (Basically just Ben butter, add confectioners and a touch of milk.)
One easy way to elevate any banana bread recipe to a touch of caramel-ly greatness is to decrease the sugar just a bit and add a package off toffee bits. There is no crunchiness to the bread...they will melt into the bread as it bakes, giving it an awesome banana-caramel flavor. I tried this after trying to replicate a Williams and Sonoma box mix I once bought.

I've been using the Martha Stewart recipe for years. The key to it is the sour cream (sometimes I use yogurt if I don't have any sour cream) and a full teaspoon of salt which really sets off all the other flavours. Seriously the best banana bread I've come across and I've tried a lot.

I freeze the bananas when they get a bit more ripe than I like, the peel turns totally brown, but they're perfect for using in banana bread.
