I would love to hear about your favorite green veg, other veg (maybe carrot?), and starchy sides! If you've got an amazing dessert idea, I won't say no to that, either.

I always like mashed potatoes at a holiday meal. I think a dark green like creamed or sautéed spinach would be good. And carrots are popular for Easter. DH really likes lamb and likes mint sauce with it- sauce, not jelly. Im actually not a huge lamb fan myself.

I'm Greek so we always have lamb at Easter (but with lots of garlic, not mint jelly ). We serve with spanikopita. It's a lot of work to make but soooo delicious, you can also buy pre made spanikopita. The frozen triangles from Costco are surprisingly good.

I love new potatoes, leeks and dark green cabbage with lamb - they go beautifully with mint sauce.

We do roasted fingerling potatoes and asparagus. Mint jelly, but I prefer a mustard sauce with mine.

I've made prosciutto- wrapped asparagus before that was delicious. I'd do something springy. Roasted potatoes would be nice too.

@Truth Bombs: I'm Greek too! We always have it with roast potatoes with lemon juice & oregano, or a nice rice pilaf. Bonus garlic points if you are serving it with tzatziki and a nice tangy salad.

Roasted asparagus (just toss in olive oil, salt, and pepper), topped with a homemade mustard vinaigrette once out of the oven. Something like this (you can skip the shallots in a pinch, but they're nice):

An easy salad of baby greens, strawberries, goat cheese crumbles, and nuts in a poppyseed dressing.
Mint jelly is easy enough to buy, and you can make an easy creamy mustard sauce by mixing grainy mustard, dijon mustard, and some mayo together with a tiny bit of minced garlic if you like, but something fresh and spring-y would be a mint chimichurri like this:

Someone once suggested a carrot souffle, I've never tried it but it always remains in the back of my mind.
What about a risotto instead of potatoes?

Roasted potatoes. My fam is vegetarian (well mixed now with Meatie spouses who eat lamb for Easter and goose for Christmas) and we usually have roasted potatoes and another tray of roasted beets, carrots, onion, and parsnips. We also have mashed potatoes, peas, Yorkshire puddings, veggie gravy, and sometimes roasted or boiled Brussel sprouts or boiled purple cabbage. We eat a lot.
Nut loaf is a nice side. Sort of like meat loaf I guess.
